Classic French Fries
Ingredients:
4 large russet potatoes
Vegetable oil (for frying)
Salt (to taste)
Optional: paprika, garlic powder, or other seasonings for extra flavor
Instructions:
Prepare the Potatoes:

Peel the potatoes (if desired) and cut them into thin sticks about 1/4 to 1/2 inch thick.
Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier. You can also soak them overnight in the refrigerator.
Preheat the Oil:

Fill a deep fryer or a large, heavy-bottomed pot with vegetable oil, leaving at least 2 inches of space from the top of the pot. Heat the oil to 325°F (163°C).
First Fry:

Drain the potatoes and pat them dry with paper towels to remove excess moisture.
Working in batches, fry the potatoes in the hot oil for about 3-4 minutes, or until they are soft but not browned. Remove them from the oil using a slotted spoon and let them drain on paper towels.
Increase Oil Temperature:

Increase the oil temperature to 375°F (190°C).
Second Fry:

Fry the potatoes again in batches for another 2-3 minutes, or until they are golden brown and crispy.
Remove the fries from the oil and place them on paper towels to drain excess oil.
Season:

While the fries are still hot, sprinkle them with salt and any other desired seasonings.
Serve:

Serve the French fries immediately with your favorite dipping sauces, such as ketchup, mayonnaise, or aioli.
